My favourite thing to bake has to be banana bread. I’m not to keen on bananas but could eat banana bread all day. Especially with a hot tea. I only make it when bananas are on the turn in the house. I can smell the sugary old banana from a mile away.
225g self-raising flour.
3 bananas, 1 mushed with a fork and the other roughly chopped, the third one is for decoration and should be sliced.
100g dark brown sugar/ muscavado sugar.
1 heaped tsp of baking powder
Oven should be 180 C for fan and 200 for non fan.
I hand mixed all the ingredients together with a wooden spoon.
Cook in a well greased tin for about 20 mins.
How do you cook your banana bread/cake? I added a Betty Crocker instant vanilla frosting for the middle. Which was a nice change.
